Orange Coconut Granola
This is a recipe adapted from Deliciously Ella.
It's pretty simple and so rewarding to make your own granola.
Ingredients:
300g of whatever nuts you like - I like to use hazelnuts, almonds and cahews for this one
200g gluten free cereal - I use oats but quinoa or buckwheat flakes work great as well
50g coconut flakes
100g raisins
Zest of 1 orange
Juice of 1/2 orange
3 tbsp of honey or maple syrup
3 tbsp coconut oil
1.5 tsp cinnamon
a pinch of salt
Soak the nuts for 8 hours in filtered water and coarse salt. Note that the cashews only need 2 hours of soaking. Then rinse and cut or blend the nuts to the desired size.
Preheat the oven at 150C.
Mix orange zest, juice, honey, cinnamon, coconut oil and salt in a bowl.
In a salad bowl mix nuts and cereal with the liquid mix.
Spread on a tray lined with baking paper.
Bake for 15 mins then stir and add the coconut flakes.
Bake for 15 more mins.
Allow to cool for at least one hour. Spread the raisins on top.
Store in an airtight container for up to 2 weeks at room temperature.
You can serve it on top of a Chia pudding and berries.
